Fit Friday: T25 – Gamma Week 4

That’s all she wrote, folks. I can’t even believe it has been FOURTEEN WEEKS. That is insane. I am so proud of myself and also so happy with my results. I’ll go in to much more detail next week when I do a whole wrap up about my thoughts about the whole things, but basically if you are even a little bit considering taking on a program I HIGHLY recommend this one. It is my absolute favorite and I go back to it when I’m “bored” of whatever rut I’ve gotten myself in to.

Best. Shape. Ever.

Week 4 thoughts.

I know I’m all kinds of in love with this program, but I am glad it is over. This phase has been a little hard on me with all the strength and weight work and I’m dying for a good cardio fix in my life. But I am so glad that I added Gamma to my life and tackled this portion of the program.

Program highlight: Speed 3.0.

This is like the other Speed workouts in Alpha and Beta in that there are 2 complete rounds you do 3 times each and then a from the top round that you do twice. There are some familiar exercises but some of the moves are combined to create new exercises. It’s a dynamic workout and I really enjoy it. I’m also glad there is a bit of cardio in this program because it was something I’ve missed in this phase.

Fit Friday: T25 – Gamma Week 3

It’s hard to believe this is almost over. I can’t even remember the girl that I was when I started. And that girl had completed 8 weeks of Insanity Max and was feeling incredibly in shape and amazing about herself. I am really happy with my decision to take on 14 weeks of T25 right after Insanity Max because it just kept my momentum and I’m in a good place to keep it going.

Hello abs.

Hello abs.

Week 3 Thoughts.

I was a little off last week, but this week I came back strong and am feeling much better about it. I was able to get in to a good rhythm this week and I’m feeling a lot stronger because of it. I am noticing a significant amount of definition and I’m so happy with that. The fact that there is so much weight work with this phase of the program helps with that definition, but I am missing some cardio in my life. I’m looking forward to adding a cardio routine in a regular rotation after this phase is over.

Program Highlights: Extreme Circuit

Surprise! More weights! More strength! More definition! That’s a definite theme with Gamma phase and this is no different. I could barely even lift my arms at the end of this one. We did burpees with weights. Let that sink in for a second. Because it was H-A-R-D. There were some new exercises for the triceps which I found I really enjoyed where in the past I have not so much enjoyed working my triceps. The basic breakdown of this is that there are five rounds each that consist of 4 exercises each done for 1 minute at a time with a 1 minute burnout. It was intense. And amazing. And I loved every second of it.

Fit Friday: T25 – Gamma Week 2

Gamma feels like it goes so much faster than Alpha and Beta did. I think part of it is that there are not double-day Fridays and it’s only 4 weeks so that feels much shorter than 5 for some reason. Plus, after 11 weeks now I’m so used to spending 25 minutes with Shaun T at the end of every day that it’s a habit (an awesome habit) that I’ve just incorporated in to my day. It’s also the best part of my day because it makes me feel so awesome both physically and mentally. I just need that active time in my day and I’m glad I’m making that time for me.

Week 2 thoughts.

I am feeling really good lately – both mentally and physically. I did end up getting “too busy” and skipped an exercise this week which isn’t something I take lightly (obviously… see paragraph one). I noticed that I had less energy and felt a little blah when I skipped my workouts. I really do enjoy these workouts and I really enjoy how they make me feel after I’m done. I feel strong and I like feeling strong.

Program Highlight: Rip’t Up.

This is much different than Rip’t Circuit in Beta, but it is also kind of similar. There is a lot of focus on the strength and definition with a lot of focus on the arms. There isn’t a whole lot of cardio, which I do find myself missing, but overall this one makes me feel really strong.

Tasty Tuesday: Taco Lasagna

It’s been a while since I’ve had a recipe to share around here. It isn’t that I haven’t been cooking, but I tend to get in to habits of cooking the same stuff over and over again because I know those recipes, I know they are good, and I know they go over well. I go through spurts of trying out new things especially when I’m bored of eating the same old stuff over and over again.

Recently I was in the mood for tacos… but not tacos. Not enchiladas. Not the same. Something different. And then I thought – taco lasagna. That is what I want. It’s going to give me the taco flavor I want without all the hassle of tacos. Because sometimes I’m also lazy when it comes to eating and I don’t want to put much work in to my food.

I did some google searches to see if anything along the lines of what I was looking for came up, but I didn’t find anything I really wanted so I made up my own recipe because it really isn’t that hard in this case.

Ingredients.

Ingredients

Ingredients

Basic taco ingredients. Except also some lasagna ingredients. Because, duh.

What you’ll need…

  • 1lb of meat
  • Salsa
  • Shredded cheese
  • Ricoctta cheese (+ 1 egg)
  • Taco seasoning
  • Scallions
  • Onion
  • Green chilies
  • Lasagna noodles

Notes: I used ground beef because I had it on hand, but I typically prefer ground chicken. It’s healthier and I think it tastes better. You can use whatever you prefer. Also, I couldn’t find the no bake lasagna noodles so I had to cook them before using them which was kind of annoying to me so if you’re not in the mood to wait for a big pot of water to boil and then wait for the noodles to cook I suggest getting the no bake kind.

Directions

  • Cook lasagna noodles according to the package
  • Saute onions and green chilies in a pan until translucent
  • Cook meat until done and then season with taco season according to the package directions
  • Mix ricotta cheese and 1 egg
  • Layer your ingredients in to lasagna
  • Bake at 350 for approximately 20 minutes (until cheese is melty and everything is all melted together)

Once all your “layers” are done you will start constructing your taco lasagna like you would regular lasagna. Layer of noodles, layer of ricotta mixture, layer of meat, layer of salsa + cheese… and repeat until you’re done with your ingredients and top the lasagna with shredded cheese and some salsa.

Variations. You could add some refried or black beans to your meat mixture and that would give it a good taste. I actually wish I had done that and thought I had beans in the pantry but was sadly mistaken when I went to make this and realized there were no beans. You could also use some queso cheese inside the lasagna instead of shredded cheese if you wanted. The possibilities are endless and all delicious!

If you end up trying this out please let me know what kind of variations you used (if any!) and how you enjoyed it.

Enjoy!

Coffee Talk

Coffee = love.

Coffee = love.

Just a random collection of thoughts I would probably share with you over a cup of coffee…

…this was my Nana’s mug and when I use it for coffee I feel like I’m having a cup of coffee with her (even though she was a tea drinker)

…I found a new coffee creamer I’m really loving. Silk Almond Milk creamer. Of all things. A year ago I would have scoffed at the idea of even trying almond milk, and now I can’t get enough of it.

…I can’t put Almond Milk in my cereal though. Whole milk all the way. Some habits are harder to break than others and this feels like one of those habits.

…I am loving my new job. I don’t talk much about what I do, because it’s not very interesting, but I enjoy it and I’m loving the hell out of this new company I’m with. I feel at home here. And it’s a nice feeling.

…I have a window in my office and I love it. I’ve never had a window before and I feel so important. It’s also nice to have a view of the outside world while I’m suck inside all day every day.

…life has been a little hard for me lately. I’ve struggled with some big life happenings and I’m having a hard time. I feel really knocked down and I’m struggling to get back up. I know I’ll get back up and I’ll dust myself off… but it’s proving harder than I thought to actually do that.

…I’m loving this summer. It hasn’t been too hot (though I could take a few less rainy days) and most days are absolutely gorgeous so we’re spending lots of time outside playing, going to the pool, taking walks, and going to the park. All great ways to spend my evening and time with my favorite girl is always a surefire way to make me happy.

…looking for a new place to live has proved to be harder than I imagined. There is a lot to consider and it feels overwhelming. I almost don’t even want to put in the energy to pick a new place to live even though that is something I really (really!) need to do.

…even though I really want to move I’m really sad about actually leaving my home. I love our home and we have so many wonderful memories there. It’s going to be extremely bittersweet.

…I am NOT looking forward to packing. I’ve been purging the heck out of my house and yet I still feel like we have so.much.stuff. I’ve been slowly packing little things here and there so I won’t be completely overwhelmed with packing all at once but still… not looking forward to it.

…I really want a piece of chocolate right now. (fit people can indulge in sweet cravings every once in a while!)

…I really need to get my hair cut and colored… but I’m not actually in the mood to sit through that.

…I’ve been working at my new job since the end of May… and I haven’t repeated an outfit once (seriously). I worked in a far more casual environment for the last several years (think jeans + t-shirts all day every day!) and it is actually nice to wear “nice clothes” to work even though I didn’t think it would be. I feel a little more adult lately.

…I recently drove by the Middle School I attended and noticed the sign out front said it was celebrating it’s 20th year. TWENTY. That’s bananas. And it makes me feel super old.

…I graduated college 10 years ago this year. Next year will be my 15th year out of high school. That also makes me feel old. That’s maddness. Because it feels like yesterday I was finally turning 16…18…21… and now? I’m creeping in to my mid-30s and that doesn’t seem as old as it used to (when I was like 16..18…21…).

…and now I’m done because that’s all I’ve got. Plus I need a cup of coffee. And a snack.

Fit Friday: T25 – Gamma Week 1

GAMMA PHASE! Oh boy. First I can’t even believe I’ve completed TEN weeks of this program. With 5 Alpha Weeks and 5 Beta Weeks behind me I’m so excited to move on to Gamma phase. I’ve done T25 before but I’ve never done Gamma so I had NO idea what to expect when I came in to it. So far I’m really liking the programs and stoked to see how amazing I look when this is over.

I'm strong and I know it.

I’m strong and I know it.

Week 1 thoughts.

Gamma phase puts a LOT of focus on strength and definition. It’s definitely different from Alpha and Beta because there is much more strength training and weight work than cardio. There is cardio in Speed 3.0, but I really enjoy the weight work because I have always felt like I needed more of that. I have a good feeling about this portion of the program and I feel like I will benefit from it immensely. I’m already noticing some of my muscles are stronger than I realized they were – like my triceps because I’ve always had a terrible time doing tricep dips but apparently I’ve got stronger arms than I’ve given myself credit for.

Program Highlight: The Pyramid.

Whoa. This is a different T25 workout for sure. I had NO idea what to expect but I loved it so, so much. I’m not sure if I will explain it well but I’m going to do my best. The name says it all – you are doing a pyramid of reps for each exercise. For instance, if you’re doing 8 reps of pike ups then you do 1 pike up, then 2 pike ups, then 3, then 4… all the way to 8. You are definitely working out your entire body with this workout. There is a lot of focus on your arms and also you are using your weights a lot. The focus with The Pyramid is endurance and strength and I feel like I got both of those at the completion of this program each time.

Three Day Weekends

Me and my girl

Me and my girl

Three day weekends are the very best. There’s just enough time to get stuff done, be busy, and also relax. There’s just enough time to really enjoy being at home with your family but not quite enough time for them to make you crazy. Three day weekends are my very favorite kind of weekend especially when I get to spend so much quality time with my girl.

Pool time.

Pool time.

This weekend we made the absolute most of all three of our days at home. We spent plenty of time playing at the pool. One morning we went and there was no one else there so we had the whole place to ourselves. It was amazing. Sydney is really enjoying all the time we’re able to spend at the pool and I’m enjoying spending so much time outside but also in the water so that it doesn’t feel so hot.

Rockin' Independence Eve

Rockin’ Independence Eve

Friday afternoon we headed to the downtown mall area near our house for their Rockin’ Independence Eve party. There was music and food and plenty of entertainment for the kiddies. Sydney had a blast just running around playing with her flags. We even indulged in some fried oreos because she was being so good (& who doesn’t love a good order of fried oreos!)

Fireworks!

Fireworks!

Once it started to get dark we made our way over to watch the fireworks display. We found a nice grassy spot to sit and we ended up being right next to where they were setting off the fireworks. I love watching fireworks. I always forget how much I enjoy them until I see them on the 4th and then I remember that they are beautiful and amazing.

watching the fireworks

Sydney was a little less than thrilled by the noise the fireworks made and she (so very sadly) kept asking for them to be all done. I was able to reassure her that it was just loud noise and once she believed me she seemed to enjoy watching them light up the sky. We didn’t make it out to any other fireworks display this weekend because of the weather, which was a little disappointing, but at the same time I’m pretty sure she wouldn’t have been too excited about the noise again.

You look like the 4th of July

You look like the 4th of July

Saturday we enjoyed a nice long nap together because we were preparing for staying up late for more fireworks… but we woke up to a huge storm and that pretty much put the kibosh on sitting in the grass to watch any fireworks that night. Oh well… we filled our time with a nice long walk and then we went to visit Uncle George at work and bring the lifeguards dinner.

Playing in the pool

Playing in the pool

Sydney really enjoyed another trip to the pool. I didn’t really plan for swimming this trip, but Sydney didn’t seem to mind that she was playing in her dress. Whatever makes you happy, kid. Whatever makes you happy.

My little daredevil.

My little daredevil.

Sunday we enjoyed a very relaxing day and another trip to the pool (of course!) in the afternoon. After a couple hours of pool time it looked like it might rain a bit so we headed home to rest a bit (because there are few naps around these parts lately…). After it decided it wasn’t actually going to storm we headed over to the park where Sydney showed off her daredevil side! I wasn’t quite as excited about this as she was, because she’s pretty clumsy, but she did a good job and her excitement was enough to calm my fears. I only let her do it once though because that was all my heart could take.

Weeee!!!

Weeee!!!

We ended our weekend happy, tired girls. I was pretty sad to head back to work yesterday because I really enjoyed spending so much time with her… but it was nice to be back in the office where no one was throwing fits (because two-and-a-half is a very hard age sometimes).

I hope you all enjoyed your weekend as much as we did!
